The Everton Hills vineyard is situated on the lower, warmer reaches of the Beechworth GI. At 282-metres, in a natural amphitheatre on decomposed granite. Handpicked, destemmed, and wild-fermented in a large, concrete, open-top fermenter. A small portion of barbera (5%) from nearby Black Springs was co-fermented. Then left on skins for 3-weeks total. Pressed to a combination of seasoned Slavonian oak demi-muids and French oak puncheons and barriques for 9-months. Bottled under DIAM closure.
Alluring scents of dark cherry cola with a splash of peach iced tea. Fresh tobacco, dried rose, and pomegranate. Generous and playful on the palate - gently unfurling tannins are ripe, powdery, chalky and detailed. Ever so slightly reductive, creating darker depth in the fruit. Fruit goes first and tannin finishes. Acid moves both along without ever playing the main character. Great varietal expression without ever taking away from its immense drinkability.
