This is our debut release of this Southern Italian stalwart. We are impressed by Fiano's natural acidity and believe its vivacity is well suited to the modern Australian dining table. Proudly grown by the Corsini family in the Upper King Valley. The vineyard is located at an elevation of 320-metres. The fruit was whole-bunch pressed and settled before wild fermentation in a combination of stainless-steel hogsheads, Clayver (sandstone fermenters), and Byron Bay ceramic eggs. Aged on fine lees for a further four months prior to bottling.

Straw / lemon hue and alpine meadow scented. Lemon oil, lime sherbert, fennel seed, and white pebble aromas and a seam of green stone fruit on both the nose and palate. Pithy lemon and nashi pear crunch. Fine powdery texture manages to achieve that Italianate, saliva inducing bitter finish.
